Chef Matt Basile's Pulled Italian Beef Sandwich Recipe | BBQ | Hall of Fame Sandwiches



Today’s Hall of Fame Sandwich is quite easily one of the most delicious sandwiches you can conjure up with a grill. The Pulled Italian Beef Sandwich is legendary for it’s flavor, and for good reason. Contrary to common belief the Pulled Italian Beef Sandwich actually originated in Chicago. Matt is making his in a backyard in sunny Florida, and you can make yours anywhere you can find a proper grill. Once that is secured get some beautiful beef short ribs from your local butcher and if possible go boneless as it will save you a ton of time later. Some people prefer to use brisket, or even a filet. The brisket takes an exorbitant amount of time and many would agree the short ribs have better flavor than either of the other options, but ultimately this is your call.

Lay these out and season them with salt and Italian seasoning. Using a cast iron skillet with a bit of olive oil in it start searing your meat. Add it to the cast iron and spice it as seen in the video. When one side has seared effectively flip it to the other, add seasoning and continue cooking. Add whole pepperoncini peppers along with beef stock directly to the skillet, close the grill lid and allow that to cook for 3 to 4 hours.

While that is cooking sauté some mushrooms as seen in the video and add them to the skillet as well. When your meat is to the point that it easily pulls apart it’s time to build your sandwich. Cut your hoagie roll, lay down a layer of provolone cheese, spoon in some muffaletta mix, then add your hot beef right on top of that. Finally, roll your sandwich is wax paper and let it rest for 30 seconds to a minute before cutting it in half.
