Italian Sandwich with Radish Greens Pesto | Joseph Erdos



I’m both frugal and resourceful. And since I love greens so much, I never throw away the green tops from root vegetables. Radish greens, beet greens, and turnip greens are among my favorites. I’ll often saute them with garlic and eat them as a side dish. But, I also love to experiment with greens, which is how I came up with this recipe for pesto using radish greens. However, instead of using this unusual pesto the usual way, i.e., in a pasta dish, I spread it onto ciabatta bread to create an Italian muffuletta-style sandwich. The pepperiness of the radish greens pesto complements the prosciutto, capocolla, and salami very nicely. There’s also shaved parmesan. And the radishes themselves get sliced up for a nice crunch in the sandwich. This is the kind of meaty sandwich you can sink your teeth into while getting in your greens.
